The Black Isle Brewery The Black Isle Brewery
Located at Munlochy, Ross-shire, just across the Kessock Bridge from Inverness, The Black Isle Brewery is one of the most recently established. However there is evidence of there having been a brewery close to the site in the past.
The Black Isle Brewery is a small, intensely independent brewery, dedicated to using only the best quality malt and whole flower hops to create a range of superb beers brewed and bottled in the heart of the Scottish Highlands.
Bridge of Allan Brewery Bridge of Allan Brewery

Located behind the Queen’s Hotel in the main street of Bridge of Allan, near Stirling.
The microbrewery is open to visitors and has a small museum of brewing artefacts.
Bridge of Allan is a member of Scotland’s Craft Brewers Co-operative.
They produce beers totally brewed by hand. All beers are brewed in traditional style, full mash, no priming sugars, no adjuncts - just hops and the robustness of fine Scottish malt plus the softness of our pure Scottish water.

There is archaeological evidence of brewing in Scotland from before 5,000BC. Initially fermented drinks would have been produced from the spontaneous fermentation of fruits, cereals and honey. Over the centuries experimentation with local indigenous herbs, flowers and fruits would have taken place in order to refine the flavours of these ales.
Hops were not grown commercially in Britain until the 18th century, during which the consumption of beer (hopped ales) was less than 10% of the consumption of ales. As taverns and commercial breweries developed Acts of Parliament were passed to standardise ale to beer. The supposed reason was to prevent the use of stimulants, narcotics and toxic plants, but it also raised taxes from malt, generating income for the House of Lords who owned the hop farms. This resulted in all beers being made from the same four ingredients, resulting in globally homogenised beers.
Although the variety of ancient flavours has been lost in 'the mists of time', the makers of Historic Ales from Scotland are encouraging you to try the flavour of the country from which it is made.

Tomintoul Brewery is located in a traditional granite and slate water mill on the banks of the Conglass Water in the heart of Speyside, more famous for its malt whiskies. The brewey uses the same pure Speside water from the heart of the Scottish Highlands to give that touch of magic to their beers.
Traquair House Brewery Traquair House Brewery

Situated at Traquair House in the Scottish Borders, the oldest inhabited house in Scotland. During recent renovations at the house, an ancient brewhouse was discovered. On finding the brewhouse, the owner decided to revive traditional Scottish brewing as part of the activities at Traquair.
